There are a lot of people who are becoming interested in cooking at home these days as opposed to going out. Yet the biggest problem a lot of people face is they don't know where to start when it comes to home cooking; what you have to do is learn as much as you can about home cooking and from there apply all that you know in order to see successful results.

Use leftover meats for sandwiches. Turkey, slow-roasted beef, braised pork shoulder roast and even chicken make great sandwich meat that can be used for meals throughout the week. You may even want to cook just for having lunch-meat that is far tastier than the kind you buy in the stores on hand.

To revive a milk-based sauce or side dish that has sat too long and lost moisture, simply add a little milk. Adding milk can make finished mashed potatoes fluffy and smooth again and can also make a pasta sauce lighter and less like a gravy without affecting the final flavor.

If you are getting frustrated because the herbs are flying all over the place and landing on the floor when you are chopping them up, try tossing a little salt onto your cutting board. This will make for a coarser surface, and keep the small pieces from moving around the board too much.

Make a big batch of stock and store it. You can store homemade meat or chicken stock in the fridge for one week, or in the freezer for 3 months. In the case of vegetable stock, you can refrigerate it for up to 4 days, but it tends to lose its flavor if you freeze it. If storage is an issue, boil the stock until it is reduced by half. This creates an intense flavored stock called a demiglace. Pour in a baking pan and freeze until hard, but not completely frozen. You can then cut the demiglace into cubes, place in plastic bags and freeze.

If you have intolerance to dairy milk, and you recipe calls for milk, a very good substitution is tofu milk. Tofu milk can come in powered form, and once mixed with water, it will have a smoother texture and better flavor than the other alternative soy milk. Use this milk when you want to replace dairy milk in recipes, over cereal or for drinking.

Looking for an easy way to prepare the perfect poached egg. While cooking the eggs, adding lemon juice or vinegar, to the water you are using for poaching the eggs will stop them from spreading out. Proteins will coagulate when an acid is used; this will help ensure your get that perfect poached egg every time.

Pomegranates are a superfood, but they can be super un-fun to peel. To make it easier, put the pomegranate portions into a bowl of water and gently separate the juicy seeds. The white pith will float to the top and the seeds will sink to the bottom. Collect the floating pith, discard it, and strain the water to be left with a bowlful of delicious seeds!

When making your own whipped cream, store the mixing bowl and beaters you plan to use in the fridge for 30 minutes or so before whipping the heavy cream. Your whipped cream will have stiffer peaks and a better overall consistency than starting with warm or room temperature utensils.

Learn to saute your food. One of the best ways to improve your cooking skill fast is to learn proper saute and braising techniques. Educate yourself on the correct form when braising, and teach yourself how to deglaze a pan. You can quickly make five star meals once you get good.

If a dish seems flat and boring, consider what kind of acidic component you could add. A dash of zest or squeeze of juice from a lemon or lime may be just what your dish needs to wake up. Or, try balsamic, white or apple cider vinegar, buttermilk, or sour cream to add a bit of tang.

Get a glistening double-crust pie top. For the perfect pie crust, brush the unbaked top with melted butter, margarine, mile or water. Then, sprinkle lightly with sugar. For a shiny golden-brown crust, brush the unbaked top with a light mixture of beaten egg and milk, skipping the sugar.

Keep greens like arugula and herbs fresher longer by wrapping them in a damp paper towel and placing them in a zippered storage bag in the refrigerator. This technique keeps the leaves from shriveling and drying out, and may extend the life of your herbs or greens for an extra four days.

When creating your next masterpiece in the kitchen, a good tip is to have all your ingredients in one place. You may want to even measure everything out ahead of time, and have all your utensils at hand, as well, so it isn't a mad dash from one part of the kitchen to another just to find something you need or forgot.

Try parsnips for a change! A lot of people tend to avoid parsnips, as they are not exactly sure how to cook them. Look for a creamy white or beige parsnip with a smooth skin. Cut into 2 inch long 'sticks' and roast in a 400 degree oven for about 20 minutes. They impart an intense nutty flavor that is nothing like the boiled parsnips that you remember from your youth!

To prevent the top layer of cheese from peeling off your lasagna or other casserole when you remove the foil, spray the foil with cooking spray prior to covering the dish with it. When you remove the foil so the cheese can brown, the cheesy layer will remain intact.
